The Sonogi growing district of Nagasaki Prefecture has cultivated tea for centuries, yet remains largely unknown outside Japan. Shade-grown for 30 days before harvest, the leaves develop an intense concentration of chlorophyll and L-theanine, resulting in a vivid jade-green powder with a naturally sweet, full-bodied umami character and virtually no bitterness.

Sift before use. Whisk briskly in a W motion for 20–30 seconds until a fine, even foam forms. Best enjoyed as a traditional thin tea (usucha), though the powder's depth also holds up beautifully in lattes and culinary applications.

Unlike the more industrialised Uji or Nishio regions, Sonogi remains a small-scale, artisan-focused growing area. Farms here pass cultivation knowledge across generations, harvesting only the youngest first-flush leaves each spring and stone-grinding them at low speed to preserve their colour, aroma, and nutritional integrity.
